My friend and author of Love Menu (www.lovemenu.com.au), Margun Carless, introduced me to her twist on the old favourite recipe which uses feta.
Ingredients:
1 Vienna loaf or baguette
½ tsp thyme
¼ cup extra virgin olive oil
Feta
½ tsp thyme180g feta
½ tsp chives
1/8 cup extra virgin olive oil
1/8 cup canola (rapeseed oil)
½ tsp cracked black pepper
½ tsp chopped chilli
Method
- Cut the tops off the heads of garlic and wrap in foil
- Roast in the oven at 180°C for about 40 minutes
- Mix the olive oil with the thyme and brush on to cut pieces of the bread
- Cut feta into small cubes and marinate with thyme, chilli, chives, oils and pepper
- Toast each side of the bread and serve with roasted garlic and feta
